Wedding Menu
On board our cruise boat we can cater for all tastes and requirements, from simple and tasteful finger buffets to a range of gourmet delicacies. A sample of one of the menus recently created for a Crannog wedding;
Starters
- Mussels Classic Style - steamed with onion, garlic, white wine and cream
- Crannog Smoked Salmon Roulade - our own hot and cold smoked salmon with pickled cucumber and dill crème fraîche
- Asparagus Tempura - shallow fried asparagus presented with a tomato and chili salsa
Main Courses
- West Coast Salmon with Scallop Mousse - seared salmon fillet accompanied with a scallop mousse, braised fennel and gravadlax cream
- Herb Crusted Cod - baked fillet of cod served with creamed Savoy cabbage, spring onion and coarse grain mustard
- Fresh Tagliatelli - with sweet pepper, onion, tomato and parmesan
Desserts
- Cranachan Panacotta - Drambuie, toasted oats and honey panacotta with marinated raspberries
- Lemon Tart - glazed lemon tart served with our own lime sorbet
- Chocolate and Hazelnut Mousse - dark chocolate and hazelnut mousse presented with wild berry compote
